Hi Dan,
It sounds like you have the [topic-excerpt] tag configured in your bbPress Notify (No-Spam) settings. Try replacing it with the [topic-content] tag instead.
You’ll find the settings under WP Admin > bbPress Notify (No-Spam) > Settings > Topic tab.
